Yellow curry, kaeng kari is a curry made from cumin, coriander, turmeric, fenugreek, nutmeg, clove, mace and cinnamon along with fresh herbs and spices such as shallots, lemongrass, chili, garlic and makrut. It generally contains less chili than other curries. Use it as a soup base, mix into meat balls, make a stir-fry or just simply simmer with coconut milk or coconut cream for an authentic and delicious Thai Curry.
